My products, are purely informational. And all the information is in Wordpress pages.
How do i make it so that when somebody is signed into the amember/member area, that they can see links to each of these specific Wordpress pages, AND have the pages be protected from anybody other than a paid member that has accessed the amember/member area.

You have to install aMember plugin into wordpress and set protection for these posts in wordpress.
Then if you want to add links to these posts in member's area. Create these links manually in aMember CP -> protect Content -> Links

I have a large number of membership types - how would you manage an Auto Protect of Any Post given a Specific Category (RHS WordPress Edit Post) so that a group of membership levels. To stop having to click so many times?

Simply add protection to the category and all posts inside the category will inherit the protection. Here is a screencast on how to do it.
