We'd like to create different access levels for subscriptions. Does aMember allow for this?

To clarify, we'd want a single subscription but with a Bronze, Silver and Gold plan where certain privileges would be 'unlocked' as they go up the food chain.

Does it do it? And, if not, is it possible?

aMember is great at handling this, you just need to properly set up the content protection.
Download the trial and try it out!

Actually we already own it. But I don't see where when creating a protected folder that it can allow or disallow certain functions that may be available for the subscriber. Perhaps to better explain:

    Bronze member gets X
    Silver member gets X & Y
    Gold member gets X & Y & Z

would I need to create three separate folders containing different content related to X Y & Z or can this be done in one folder and when they log in it would recognize if they get X Y or Z or all 3?

You can do this both ways.
First (when you create three separate folders) will work by default.
Second will require customization from your end.
