I've been using the post-levels plug in with amember to control access to content by the user and post level but the plug in throws an error in WordPress 3. Are there any alternatives? How would I implement them?

Use Ken's amprotect plugin. Its stable and works with 3.x.

Would I be able to use the existing post-levels information or would I be required to reset that for each user and/or protected post?

You would then protect each page/post/category with the amprotect system- this lets you protect dependent on the amember product, rather then relying on levels.

It doesnt protect for individual users though.

I wouldn't recommend using Post-Levels plugin with something like WP 3.0, as the plugin itself hasn't been updated in over a year and a half... go with something like amProtect from Ken or the new WP plugin that comes with aMember -> http://www.amember.com/p/integration/new-wordpress-plugin/
